For those planning an upcoming trip to Aulani, A Disney Resort & Spa in Hawai’i, the resort’s signature ‘AMA ‘AMA restaurant now has a reopening date and a new menu.
The Restaurant
‘AMA ‘AMA, named after the ‘ama‘ama fish of Hawai’i, will reopen in less than two weeks on October 14, 2022, after extensive renovations.
These renovations have changed the interior, incorporating more ocean blue into the wood tones. I think it brightens up the restaurant.
Guests will also notice a story of familiar details seemingly left by generations of family members, including the resort’s beloved Aunty and Uncle, who lived in this space and continued to expand on it over time.
The menu for ‘AMA ‘AMA has also been completely changed.
The New Menu
The talented Chef De Cuisine Nicholas Amoriello has created a four-course, prix fixe dinner menu for $125 per person, where each course pays homage to the spirit of Hawai‘i, with unique flavors, high-quality ingredients, and locally sourced fish and produce.
This menu includes dishes like the “lox” opakapaka with greens, citrus, and raw and pickled vegetables, and the savory Pork Belly with “scanlan sauce,” onion, kiawe honey and Okinawan sweet potato.
The menu is almost completely gluten-free, with a plant-based option available for every course to ensure every type of dietary need can experience the very best of Hawai‘i’s flavors.
For guests age 3-9, there is also a three-course Keiki menu for $55 per person featuring more kid friendly dishes like Mickey & Minnie-shaped Spam Musubi and Grilled Steak with Roasted Potatoes, Green Beans, and Demi Glace.
At this time, it doesn’t look like an a la cart menu is being offered.
Pastry Chef Carolyn Portuondo has also prepared a decadent selection of desserts for the new menu, incorporating iconic local flavors such as lilikoʻi, calamansi, coconut, mango, macadamia, and Kona coffee.
A globally curated wine list is also available to guests, with wine pairings an additional $55 per person.
