Meet the man behind Disney Springs’ breakout restaurant – Wine Bar George

Wine Bar George has become a home away from home for locals and frequent visitors to Walt Disney World. From the ‘Froze’ (a Rose slush) and 140 wines by glass, bottle, or ounce to a menu that stands up against anything you might find in Walt Disney World, the word is out that Wine Bar George is a must-visit for guests at Disney Springs.

The vision of George Milotes, a long time Walt Disney World sommelier who helped open the California Grill at Disney’s Contemporary Resort, Wine Bar George features two levels of great dining with three unique spaces. Downstairs feels like an intimate neighborhood bar that reminds one of Napa Valley wine rooms, while upstairs is split into a more laid back bar area, offering a few beautiful views of The Landing area of Disney Springs and the barrel room which is evocative of a French winery for a nice meal with the best wine.

We had a chance to speak with George Milotes, the Master Sommelier whose name is on the establishment, about the first 7-ish months of Wine Bar George, his philosophy of wine service, his relationship with his executive chef Ron Rupert, and what sets Wine Bar George apart from the other establishments in Disney Springs – employee training.

There are only 274 Master Sommeliers in the world and it’s great to have one of them available most nights at Disney Springs. A big thank you to George for inviting us to share a meal at his restaurant, we will return with a full review of that experience later this week.
