Beatrix delivering Disney Springs a new restaurant with a healthy focus

Coffeehouse, restaurant, gathering place. Beatrix will soon bring its new healthy and flavorful dining option to Disney Springs at Walt Disney World. Owned by Chicago’s Lettuce Entertain You Enterprises (I can’t resist a good pun), Beatrix focuses on healthy comfort food with a selection of vegetarian and vegan options.

In addition to a coffeehouse and neighborhood restaurant, which includes a bakery and full-service bar with a selection of all-American beer and wine, the Disney Springs location will offer a grab-and-go market.

“Beatrix represents the way people are eating today – it’s that mix of health and comfort. Whether grabbing a cup of coffee and your favorite pastry, or having a cocktail, lunch, or dinner with friends, it’s your neighborhood meeting place,” said Executive Partner and Divisional President, Marc Jacobs.

I know, the last thing you want to think about when you’re on vacation is how healthy that meal is you’re about to enjoy. That’s actually part of the promise of Beatrix. You won’t have to worry if that meal you ordered is gluten-free or plant-based.

I am beyond thrilled to see more vegan, vegetarian, and healthy options at Disney Springs. The location on the Westside will make it the perfect place to drop in before or after a show at Cirque Du Soliel or the AMC Theatres.

Beatrix is moving into one of the existing buildings over on the Westside of Disney Springs. You may recognize the building with the iconic Pineapple as the former home of Bongo’s Cuban Cafe from the great Gloria Estafan. Disney and the Estafan’s decided to part ways earlier this year, which made this space available for Beatrix.

We’re pretty happy to have Beatrix join the mix of dining at Disney Springs. It’s true there’s a lot of competition in Lake Buena Vista, including some pretty big named chefs, but nothing in the healthy American comfort food vertical.

Are you excited to hear Beatrix will be opening up at Disney Springs? No official opening date yet, but we’ll keep a close eye on this project for obvious reasons.
