We already knew that Fulton’s Crab House closed in April for a 6 months remodel to help it compete with the new mix of shops and restaurants opening at Disney Springs. Now we know that the location will also get a new name – Paddlefish. They’re still planning a November 2016 opening, but stay tuned for a more specific date.
In a statement this morning Levy Restaurants, who opens Fulton’s, said the location was closed as it “undergoes a revitalizing bow to stern transformation that will exude an opulent and inviting atmosphere for guests.”
From the new concept art it looks like they will add back the distinctive smokestacks and paddlewheel of the sternwheeler ships the restaurant was modeled after.
It sounds like the dining options will return a bit more upscale, but also have some of the favorite menu items from Fulton’s, including Florida Stone Crab, Alaska King Crab, and Lobster corn dogs along with seafood, steak, and pork chops options. No word if the Sunday Brunch option will return, but we enjoyed our visit and hope it does.
“We’re excited to embark upon Paddlefish’s next voyage, and can’t wait for guests to share this new experience with us,” said President and CEO of Levy Restaurants Andy Lansing. “As Disney Springs evolves and grows, we’re looking forward to sharing this newly reimagined restaurant with both vacationers and Florida locals.”

Sunday brunch will return! It will begin at 11:30 a.m on Sundays.
Thanks Jon!
Certainly sounds like the prices are going up. Thanks for the update.
Call it what you will, it will never have a classier name than The Empress Lily.
