The New York Times says the Turkey Leg is Disney’s newest foodie star. I’m a fan of the Pork Shank myself. In fact, just had it for lunch today at Gaston’s in New Fantasyland.
While the turkey leg is brined & smoked, the pork shank is just dosed with salt and pepper then slowly roasted. That gives it an amazing falling off the bone tenderness that the turkey leg can never achieve. The turkey leg has those random bones to contend with and getting those last bits of meat can be a challenge.
