Changes afoot at Jiko, California Grill

Orlando Restaurant Critic Scott Joseph is keeping an eye on the Disney dining scene for everyone. He recently noted that Brian Piasecki left his chef’s toque at Jiko the Cooking Place to take over as the chef de cuisine at California Grill. Now the question is who will assume that toque at Disney’s Animal Kingdom Lodge.

Word comes now that the position has been filled by Disney veteran chef John Clark, who most recently has been in charge of first floor culinary operations at the Grand Floridian Resort & Spa.

Joseph says Clark has had an off and on history at Disney starting as executive chef at Coral Reef in Epcot’s Living Seas; then he left Disney in late 2000 to open a restaurant off his own. He later cooked at Beluga in Winter Park. Of late he’s been working in the ground floor restaurants at the Grand Floridian.
