The Disney magic is so strong many former workers find they can never really leave their Disney roots behind. This is definitely true for Master Sommelier George Miliotes, who helped open the original California Grill at the Contemporary Resort. Miliotes is returning to Disney and is very close to opening his own wine bar at Disney Springs – Wine Bar George.
“Disney Springs is the perfect place to open a wine bar and share my passion with the world,” Miliotes said. “Having the opportunity to train and hire my own team while sharing my 40-plus years of knowledge is truly incredible, and I look forward to opening our doors soon.”
We just learned that Wine Bar George will officially open at 5pm on Saturday May 19 and will start regular hours of 11am to 2am the next day. We can already taste the first sip of wine on our lips. But wine won’t be the only thing on the menu at Wine Bar George there will be food too.
We were provided a look at the menus for the upstairs wine bar and The Basket at Wine Bar George.

The Basket is the downstairs counter service location that will allow you to grab a cheese board, charcuterie, sandwich and some wine to go for a nice little picnic back at your resort. There are also a variety of other quick service style food and snacks… and of course wine.
As you can see, the Basket intends to serve wines on tap. I’m no master sommelier, but the Pinot Noir from Argyle in Willamette Valley of Oregon is a lovely option. I can’t wait to try the others.
Some items on the menu at The Basket will be eligible for Disney’s quick service dining plan. The upstairs full dining location won’t be a part of the program.
We went to a preview tasting at the 200-seat upstairs wine bar last night and hope to have a review of the experience up soon.
