Guests lucky enough to experience a Disney Cruise Line vacation around Thanksgiving have the option of enjoying a very special dessert: pumpkin cheesecake. I just made this for a weekend function as a test prior to making this on Thanksgiving. The flavor is great, but honestly, I have serious doubts on whether the test kitchen actually tried this in-home recipe edition. The pictures show an even layer of pumpkin and cream cheese layer. The recipe provided yielded about a 1/4″ of pumpkin filling in my 9.5″ spring form and the cream cheese was almost 1″ thick. I would recommend doubling the pumpkin filling and cutting out by 25% the ingredients for the cream cheese layer.
